Bean and Pepperoni Stuffed Steak with Orange Salad
I have never done a stuffed steak before, so I thought what better time to do it when Jason has a food challenge for me! If it didn't turn out right, I could always blame it on the ingredients chosen. But surprisingly, it was pretty delicious. I keep surprising myself with putting these ingredients together and somehow making it work. The pictures, however didn't turn out very clear and I probably should have taken one of the steak cut, so you could see it in the spiral form. Anyway...this is what we got.
This food challenge was last week's and the challenge ingredients were: refried beans, pepperoni, oranges and green leaf lettuce.
Bean and Pepperoni Stuffed Steak
1 tbsp olive oil
1-2 lb beef top round
15 oz canned refried beans
1/2 cup shredded monterey jack cheese
1/2 cup pepperoni slices
Heat oil in medium skillet over medium-high heat.
Tenderize steak and flatten so steak is 1/4-inch thick. Season with salt and pepper. Layer refried beans, cheese and pepperoni slices evenly on steak. Roll steak into a cylinder shape. Place seam side down in skillet, cooking until just browned. Turn carefully to brown other side of meat, about 3 minutes each side.
Heat oven to 350 degrees. Place steak roll on baking sheet and finish cooking in oven, for about another 10 minutes. Remove from oven and let sit for about 5 mintues. Cut steak to form spiral servings.
Orange Salad
1 head green leaf lettuce, cut into bite-size pieces
2 oranges, peeled and cut into wedges
1/2 cup sliced roasted red bell pepper
1/4 cup olive oil
1/4 cup balsamic vinegar
2 tsp basil
salt and pepper to taste
Place lettuce, oranges and red bell pepper in large salad bowl. Mix oil, vinegar, basil and salt and pepper in a small bowl. Pour over salad and toss to mix.
