This is my quest to figure out answers in life to...whatever happens to us everyday. I have been diagnosed with cancer this past year, and I'm not necessarily trying to figure out why this happened to me, but what is the meaning behind it all.

A Reason For A Fiesta?
Happy Cinco de Mayo to anyone who needs a reason to party. Don't you just love these "holidays" that have been invented by America just so people have a reason to celebrate something, anything? Don't get me wrong though. I am not bashing what this day is about. It is a significant day to observe Mexican culture, heritage and ancestry. It's not about Mexican Independence, which most people think it is. (That day is September 16) It's celebrating a battle that was won against the French, even though that victory didn't last long. Anyway...enough about that. I'm not trying to be the History Channel.
I will embrace my heritage. I am not 100% Hispanic, but that's okay. I'm Irish and German too. I like celebrating St Patrick's Day and Oktoberfest as well. Whatever day we need to make a "holiday" so we can have a reason to down some alcoholic drinks! (Not that I really need a day set aside for that.)
However, I am thinking about things we did growing up that reflected our heritage...making chile rellenos, tamales, empanadas, menudo (not my favorite). I loved that we always made them as a family to. With a big family like ours, having the assembly line to make tamales was the best! And we always made our empanadas with fruit inside. Delicioso! Nowadays, you find so many different varieties of mexican cuisine. I don't mind the gourmet mexican food, but I'll always choose the authentic kind over that any day.
I didn't plan on making mexican food tonight, or even going out for mexican food. But I will have a margarita (or two) to celebrate.
